A special collaboration with Aeronaut Brewery: Colombian cacao nibs were added to the fermentation tank during the creation of Aeronaut’s Cocoa Sutra beer and remained throughout the 2 week fermentation. They were then returned to Somerville Chocolate, dried, and refined into a chocolate.
The beer fermentation imparts a wild sequence of flavors that work independently of and together with chocolate: honey, malt, pineapple / evergreen hops notes, and notable but not overwhelming bitter finish.
